Puff Pancakes
  • Servings: 16 (or one for Dad)
  • 2 cups whole wheat or unbleached flour
  • 1/4 cup nonfat dry milk powder
  • 2 t baking powder
  • 1 t salt
  • 1 1/2 cups milk
  • 1/4 cup vegetable oil
  • 2 egg whites, beaten until stiff
  1. Mix dry ingredients together in a large bowl.
  2. Make well in center.
  3. Pour milk and oil into the well and mix until dry ingredients are just moistened.
  4. Gently fold beaten egg whites into the batter.
  5. Pour by 1/4 cups onto a lightly greased, hot griddle.
  6. Bake until bubbles form and begin to break on the surface and sides begin to look done.
  7. Turn and brown the other side.
