Potato pancakes
INGREDIENTS
- 250 g cold mashed potatoes
- 75 g flour + 1 tsp baking powder
- 2 eggs
- 125 ml milk
- 1 rounded tsp finely snipped chives (ci stanno molto bene!)
- ½ tsp oil
- a dot of butter
- creamy scrambled egg and crisp rashers of bacon
DIRECTIONS
- - 250 g cold mashed potatoes + 75 g flour + 1 tsp baking powder
- - Whisk 2 eggs and 125 ml milk together, add to the potato mix
- - + 1 rounded tsp finely snipped chives (ci stanno molto bene!)
- - Whisk the batter until smooth
- - Heat a large non-stick frying pan, medium heat
- - + ½ tsp oil, a dot of butter, cook pancakes 1 min until small bubbles appear, flip
- - Serve with creamy scrambled egg and crisp rashers of bacon
