Potato pancakes
INGREDIENTS
  • 250 g cold mashed potatoes
  • 75 g flour + 1 tsp baking powder
  • 2 eggs
  • 125 ml milk
  • 1 rounded tsp finely snipped chives (ci stanno molto bene!)
  • ½ tsp oil
  • a dot of butter
  • creamy scrambled egg and crisp rashers of bacon
DIRECTIONS
  1. - 250 g cold mashed potatoes + 75 g flour + 1 tsp baking powder
  2. - Whisk 2 eggs and 125 ml milk together, add to the potato mix
  3. - + 1 rounded tsp finely snipped chives (ci stanno molto bene!)
  4. - Whisk the batter until smooth
  5. - Heat a large non-stick frying pan, medium heat
  6. - + ½ tsp oil, a dot of butter, cook pancakes 1 min until small bubbles appear, flip
  7. - Serve with creamy scrambled egg and crisp rashers of bacon
