Potato Latkes
  • 3 c. grated or shredded raw potatoes
  • 1/2 c. shredded onion or green onions
  • 2 beaten eggs
  • 2 tbsp. flour or potato flour
  • 1 tsp. salt
  • 3 tbsp. oil
  1. Mix all ingredients except oil. Use oil to grease skillet or griddle. When oil is hot drop potato mix by spoonfuls onto griddle. Spread batter slightly. Fry until brown, about 2 minutes each side. Serve hot with applesauce or sour cream. Keep latkes warm as more are fried. Makes about 15.
I love to make latkes during Chanukah. they are definitely a special treat for my family!
