Potato Corn Camp Chowder

- potatoes - 1 per person served
- canned or frozen corn niblets
- canned cream corm
- milk or cream - 1 two 2 cups
- onions
- bacon or ham (optional)
- 1 tbsp vegetable oil
DIRECTIONS
- Cut potatoes into bite-sized pieces, peeling is optional. Dice onions and bacon or ham.
- In a large saucepan heat oil and add diced onions, bacon and ham
- saute until onions are soft. Add potatoes, saute for a couple of minutes.
- Add water until the potatoes are just covered.
- Heat on high until boiling then lower and simmer until potatoes are almost done.
- Add canned corn and canned cream corn.
- Add milk, adjust the amount to suit taste.
- Add salt to taste.
- Add pepper to taste. Usually, a liberal amount is needed as there are no other spices in the recipe.
