Polynesian Wedding Cake

  • 1 1/4 cups corn oil
  • 2 cups sugar
  • 3 eggs, set aside
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla
  • 1 teaspoons salt
  • 3 1/2 oz. grated coconut
  • 2 cups grated carrots (packed tight)
  • 1 cup chopped walnuts
  • 1 sm. can drained crushed pineapple
DIRECTIONS
  1. Beat together oil, sugar and eggs at high speed until light and fluffy. Set aside. Blend remaining ingredients in large bowl with wooden spoon. Add to sugar, oil and egg mixture. Stir to blend thoroughly. Pour into greased and floured 9 x 13 inch pan or size pans need for the wedding cake. May have to make double for 3 layers. Bake 350 degrees for 50 minutes less for smaller pans. Check with toothpick test. Cool and frost.
