Pesto chicken
  • 4 chicken breasts, skin removed.
  • sharp tasty cheese cut into 4 thick rectangles.
  • basil pesto
  • sufficient shaved ham (you could use bacon or pancetta) to roll each breast up in.
  1. Cover baking tray with silicone paper, then cut a thin opening into middle of chicken breast, and insert rectangle of cheese.
  2. Cover breast with basil pesto, roll up in ham, place on tray, repeat with remaining breasts. Bake at 200 degrees C for 40 minutes (depending on size of breasts)
  3. Serve with crusty bread, potato wedges, and green salad.
Having just blogged about liking the smell of my kitchen after making a batch of fresh pesto, I thought I'd share the recipe for tonight's tea
