Pesto chicken
INGREDIENTS
- 4 chicken breasts, skin removed.
- sharp tasty cheese cut into 4 thick rectangles.
- basil pesto
- sufficient shaved ham (you could use bacon or pancetta) to roll each breast up in.
DIRECTIONS
- Cover baking tray with silicone paper, then cut a thin opening into middle of chicken breast, and insert rectangle of cheese.
- Cover breast with basil pesto, roll up in ham, place on tray, repeat with remaining breasts. Bake at 200 degrees C for 40 minutes (depending on size of breasts)
- Serve with crusty bread, potato wedges, and green salad.
