Peru Com Bacon

  • 20 oz skinless boneless turkey

  • ½ cup real maple syrup
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes
  • 1 dash cayenne pepper
  • 1 lb package bacon (20 slices)
  1. Cut up the turkey breast into big bite-size pieces about 1 oz each and toss them in a mixture of the maple syrup, black pepper, red pepper flakes, and cayenne.
  2. Wrap each piece in a slice of bacon, securing it with a toothpick, and broil them for about 15 minutes until cooked all the way through and the bacon is crispy on the edges.
  3. Serve immediately.
This is a Brazilian appetizer and is my take on something I had at a Brazilian restaurant in Colorado. They are very flavorful, but they must be watched carefully to make sure that they are not overcooked.
