Peanut Sauce (Thai)
INGREDIENTS
  • 1/4 cup oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1/2 tsp red chili flakes
  • 1/2 tsp curry powder
  • 1 Tbsp lemon grass
  • 1 cup coconut milk
  • 1 2" cinnamon stick
  • 3 bay leaves
  • 2 Tbsp fish sauce
  • 3 Tbsp brown sugar
  • 3 Tbsp lime juice
  • 1 cup chunky peanut butter
DIRECTIONS
  1. Saute garlic, onion, chili pepper flakes, curry powder, and lemon grass for 2-3 minutes.
  2. Stir in all other ingredients and lower heat to just a simmer.
  3. Cook for about 20-3o minutes being very careful to not burn sauce.
