Peanut Butter Cup Fat Bombs

  • 3/4 cup almond flour
  • 2 oz Kerrygold butter (4 TBSP, room temperature)
  • 1/4 cup powdered sugar substitute (I use Pyure)
  • 1/2 cup peanut butter (I use Crazy Richard's)
  • 1 tsp vanilla
  • TOPPING:
  • 1/2 cup sugar free chocolate chips (I use Lily's)
DIRECTIONS
  1. Lay down parchment paper in an 8x8 pan.
  2. Mix all the ingredients for the bars together and spread into pan.
  3. Melt the chocolate chips in a microwave for 30 seconds and stir.
  4. Spread the chocolate on top of the bars.
  5. Refrigerate for at least an hour or two until the bars thicken up.
