Peanut Butter Cup Fat Bombs

- 3/4 cup almond flour
- 2 oz Kerrygold butter (4 TBSP, room temperature)
- 1/4 cup powdered sugar substitute (I use Pyure)
- 1/2 cup peanut butter (I use Crazy Richard's)
- 1 tsp vanilla
- TOPPING:
- 1/2 cup sugar free chocolate chips (I use Lily's)
DIRECTIONS
- Lay down parchment paper in an 8x8 pan.
- Mix all the ingredients for the bars together and spread into pan.
- Melt the chocolate chips in a microwave for 30 seconds and stir.
- Spread the chocolate on top of the bars.
- Refrigerate for at least an hour or two until the bars thicken up.
