Peanut Butter Cookies
  • 3 c flour
  • 1 t baking soda
  • 1 c margarine
  • 1 c peanut butter
  • 1 c brown sugar
  • 1 c sugar
  • 2 eggs
  1. Mix flour & baking soda. In large saucepan, melt margarine and peanut butter over very low heat. Remove from heat; stir in sugars and eggs until smooth.
  2. Gradually stir in flour mixture until a smooth, soft dough forms. Cover and refrigerate at least 1 hour or up to 3 days.
  3. Drop rounded teaspoonfuls 2 inches apart on greased or nonstick cookie sheets. Flatten w/tines of fork dipped in flour. Bake in preheated oven at 350 F for 8-12 minutes or until slightly firm. Cool on sheet one minute; remove to racks to cool.
Delicious cookies, but is margarine still a thing? -Sarah
