Pani Puri Recipe
INGREDIENTS

  • FOR GOL GAPPAY:
  • Soji (Semolina) 1 cup
  • Maida (Flour) 1/2 cup
  • Mash ki daal ka ata 2 tbsp
  • Soda gondhne k liye
  • Oil for deep fry
  • FOR FILLING:
  • Aloo 1 cup (boiled)
  • Bondi 2 cup
  • FOR SOUR WATER:
  • Podine k patte (mint leaves) 1/2 gathi
  • Hari mirch ( green chili) 3
  • Water 1 litre
  • Imli ka goda 1/2 cup
  • Dhaniya 1 tsp roasted and powdered
  • Zeera 1 tsp roasted and powdered
  • Lal mirch powder 1/2 tsp
  • Salt 1/2 tsp
  • Adrak 2 tbsp crushed
  • Lemon juice 2 tbsp
DIRECTIONS
  1. FOR SOUR WATER:
  2. 1. Blender main podine k patte hari mirch or kati adrak daal kar achi tarha pees lain. Ab is paste ko pani main shamil kar dain.
  3. 2. Sath he imli ka goda, bhuna or pisa dhaniya, bhuna or pisa zeera, pisi lal mirch, namak or lemon juice daal kar achi tarha mix karain.
  4. 3. Is k baad khatte pani ko chaan kar fridge main thanda hone k liye rakh dain.
  5. FOR GOL GAPPAY:
  6. 1. Aik pyale main soji, maida or mash ki daal ka atta mix karain. Phir use hasbe zarorat club soda daal kar gondh lain. Atte ko 30 mint k liye rakh dain, phir use dobara gondhain.
  7. 2. Ab hatheeli par thori si chiknai laga kar chote paire banayain. Har paire ko choti pori ki shaqal main bail lain or geele kapre k darmiyan main 10 mint k liye rakh dain.
  8. 3. Akhir main ise garam tail main halki anch par fry karain k pholne lagain. Phir anch taiz kar k crispy ho jane tak fry karain.
  9. FOR SERVING:
  10. 1. Angothe ki madad se aik gol gappay main surakh karain.
  11. 2. Is main uble aloo or pani main 10 minute bheegi hoi bondi bharain.
  12. 3. Agar pasand ho to imli ki chatni bhi dal sakhte hain.
