Overnight Pea Salad
  • 1 head of lettuce (torn in bite-sized pieces)
  • 2 cups mayonnaise
  • 2 T. sugar
  • 8 slices cooked bacon (crumbled)
  • 1 small onion (chopped)
  • 1 pkg. frozen peas (do not thaw)
  • 4 oz. shredded cheddar cheese
  1. Layer lettuce in a 9x13 pan
  2. Spread mayo over the lettuce
  3. Sprinkle sugar over mayo
  4. Layer the bacon, then chopped onion, then the peas and finally the cheese on top.
  5. Cover tightly and refrigerate overnight for best flavor.
  6. Variations: 2 hard-boiled eggs, chilled and sliced or optional layers like 1/2 cup diced green pepper and 1 cup diced celery or carrots.
