Oven-Fried Shrimp With Marmalade Dip
  • 6 unpeeled Jumbo fresh shrimp(1/2 pound)
  • 1 tsp grated orange rind
  • 1/2 cup fresh orange juice
  • 1/4 tsp crushed red pepper flakes
  • 1/2 cup dry bread crumbs
  • 1/2 tsp garlic powder
  • 4-oz container of egg substitute
  1. Peel the shrimp, leaving on the tails.
  2. Butterfly the shrimp, but not all the way through.
  3. Rinse and pat dry.
  4. Combine the orange rind, juice and crushed red pepper.
  5. Add the shrimp, cover and chill for 30 minutes.
  6. Remove the shrimp and discard the marinade.
  7. Combine the bread crumbs and garlic pepper.
  8. Dip the shrimp into the egg substitute then into the bread crumbs.
  9. Place on a baking sheet and bake at 350 degrees for about 15 minutes.
Prepare the dip ahead of time and chill
