No Bake Energy Bites

INGREDIENTS
  • Servings: 18-20 balls
  • 1 cup oatmeal
  • ½ cup peanut butter (or other nut butter)
  • ⅓ cup honey
  • 1 cup coconut flakes (I prefer toasted)
  • ½ cup ground flaxseed
  • ½ cup mini chocolate chips
  • 1 tsp vanilla
  • There are many alternatives here: Dried cranberries with white chocolate, dark chocolate and cherries, agave or maple syrup rather than honey, almond extract instead of vanilla. The possibilities are endless.
DIRECTIONS
  1. Mix everything above in a medium bowl until thoroughly incorporated.
  2. Let chill in the refrigerator for half an hour.
  3. Once chilled, roll into balls and enjoy!
  4. Store in an airtight container and keep refrigerated for up to 1 week.
