Nasi Goreng (Indonesian Fried Rice)
INGREDIENTS
- 2 cups uncooked Basmati rice
- 4 large onions, chopped
- 10 cloves garlic, sliced
- 1 teaspoon fresh ginger, minced
- 1 teaspoon coriander
- 1 teaspoon cumin
- 1 teaspoon gallanggal powder*
- sliver of trasi (dried shrimp paste)
- 2 teaspoons sambal oelek* (ground Red pepper paste)
- 3 tablespoons kecap manis sedang* (Indonesian medium sweet soy sauce)
- 2 tablespoons canola oil
- 4 eggs
- 3 tablespoons cold water
- 2 tablespoons butter
DIRECTIONS
- Place rice in large saucepan, add 4 cups of water and cover.
- Place on high heat until it boils then turn heat to low until water is absorbed.
- Remove from stove and let it cool, then place in refrigerator overnight.
- Sauté onions and garlic in oil in a wok or large frying pan until golden brown.
- Add ginger, coriander, cumin, galanggal, shrimp paste and sambal oelek.
- Fry the combination for about 1 minute. Gradually add the pre-cooked rice, then add the kecap manis sedang.
- Maintain a low steady heat, stir constantly until thoroughly warmed.
- Beat eggs with cold water in medium bowl. Heat butter in non-stick frying pan.
- Pour in egg mixture and fry on both sides until golden brown.
- Cut omelet into strips, than cut those strips in half.
- Add omelet strips to Nasi Goreng and mix thoroughly.
