INGREDIENTS

  • 1 box lemon jello (small box)
  • 1 cup boiling water
  • 1 can evaporated milk 12 oz
  • 1 pkg cream cheese
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 2 cups crushed pineapple drained
  • 3 cups crushed graham crackers
  • 1 stick melted butter
DIRECTIONS
  1. Dissolve jello in boiling water; place in fridge until chilled and slightly thick
  2. Mix together cream cheese, sugar, vanilla, drained pineapple and thickened jello, blend well
  3. Whip the evaporated milk; fold this into the cheese mixture
  4. Mix the graham cracker crumbs and butter; use about 2/3 to pack bottom and sides of 9 x 13 pan
  5. Spoon filling into pan and sprinkle remaining crumbs on top
  6. Chill at least 3 hours or overnight before serving
