Mom's Lemon Meringue Pie
  • 1/2 cup cold water
  • 7 TB cornstarch
  • 1 1/2 cup Hot water
  • 1 1/2 cup sugar
  • 3 eggs yolks slightly beaten (save whites)
  • The juice of 1 lemon-or more to taste.
  • 1 Tbsp. butter or marg.
  1. Mix corn starch and water -set aside
  2. Heat water and sugar to boiling, add corn starch and cook until thickens-put a little sugar water mixture to egg yolks.
  3. Stir-then add beaten egg yolks to mixture.
  4. Cook till thick.
  5. Add lemon Juice and butter-blend well.
  6. Cool-put in baked pie shell.
  7. For meringue-beat whites til stiff.
  8. Add about 1/2 cup sugar gradually spoon over cooled lemon pie.
  9. Put in oven till tips of meringue turn golden brown.
