Mochiko squares
INGREDIENTS
  • Cooking Time: 75
  • Servings: 12-15
  • Preparation Time: 10
  • 1/4 c butter
  • 1 cup sugar
  • 1 1/2 t vanilla
  • 1 t baking powder
  • 1 box mochiko
  • 3 eggs, beaten
  • 2 egg whites
  • 3 cups milk
DIRECTIONS
  1. Beat together all of the above ingredients and pour into 9x12 baking dish.
  2. Bake at 325 degrees for 75 minutes
  3. Let cool completely, cut into squares

My Auntie Janet makes this dessert, and it is really hard to describe -done right it is light but chewy and can be dangerously addictive! p.s. you really need to have at the very least a hand mixer for this - don't even attempt to do it by hand unless you can beat like the wind :)
