Miniature Chocolate-strawberry Cupcakes

  • 3/4 cup plus 2 tbsp. all-purpose
  • flour
  • 2 tbsp. unsweetened cocoa
  • 1/4 tsp. salt
  • 2 sticks unsalted butter, cut up
  • 4 oz. 70% bittersweet chocolate,
  • coarsely chopped
  • 1 1/3 cups sugar
  • 1 teaspoon vanilla extract
  • 4 eggs
  • GARNISH
  • 36 slices of strawberries
DIRECTIONS
  1. 1.Heat oven to 350°F. Line 3
  2. (12-cup)mini muffin pans with paper
  3. liners. Whisk flour, cocoa and salt
  4. in small bowl.
  5. 2.Heat butter and bittersweet
  6. chocolate in large heatproof bowl
  7. placed in skillet of almost
  8. simmering water; stir frequently
  9. until chocolate and butter are
  10. melted and quite warm to the touch.
  11. Remove bowl; whisk in sugar and
  12. vanilla. Whisk in eggs one at a
  13. time until blended. Add flour
  14. mixture;whisk just until smooth
  15. and blended.
  16. 3.Spoon about 1 1/2 tablespoons
  17. batter into each muffin cup (batter
  18. will come almost to top of liners).
  19. Bake 15 to 20 minutes or until
  20. toothpick inserted in center comes
  21. out with just a few moist crumbs
  22. attched. Cool on wire rack.
  23. Makes 36 cupcakes
