Michelle Losey's Cottage Cheese Custard Pie

INGREDIENTS
- 16 oz cottage cheese
- 3 eggs
- 1 tsp vanilla
- 1 tsp lemon juice
- 12 oz evaporated milk
- 1 1/2 cup whole milk
- pinch of salt
- *opt: pinch of nutmeg
- 1 cup white sugar
- 3 TBS cornstarch
- Homemade or store bought pie crust
DIRECTIONS
- Preheat oven to 375F
- Strain cottage cheese for 1/2 hour or more
- In blender mix eggs, vanilla, lemon juice, milk and salt (opt nutmeg)
- Blend for a min or two
- Add sugar and cornstarch
- Blend for a min or two
- Put cottage cheese in bowl add blender mix and mix well
- Pour into pie crust
- Cover edges w/ tin foil
- Bake at 375F
