Michelle Losey's Chunky Chili
  • 2 LBS frozen hamburger
  • 3 cans Delmonte original flavor stewed tomato's
  • 3 cans dark red kidney beans (strained)
  • 3 cans campbells tomato soup
  • 2 yellow cooking onions (cut in bite size chunks)
  • 1-2 large green bell pepper (cut in bite size chunks)
  • 1 stalk celery (cut in bite size chunks)
  • 2-3 TBS chili powder
  • 1/2 tsp. cayenne powder
  • About 3-4 shakes of garlic powder
  • Pepper
  • pinch of cayenne pepper seeds (like 5-8 seeds) or crushed red pepper flakes
  • small pinch of sugar (if you've added a 1/8 tsp you've added too much!!!)
  • OPT toppings: saltine crackers crunched up (my son won't eat it w/out crackers lol) spoon of sour cream, shredded cheese most use cheddar but I like colby
  1. Put frozen hamburger in pan w/ about 1/2 - 1 cup water
  2. Fry meat as side gets done scrape it off in chunks
  3. Brown, Strain NOTE: always add vegetable and spices after browning and straining meat! If you add it before straining it you throw a 1/2 or more of your flavoring dwn the drain!
  4. After straing put meat back in pan and add onions, peppers and celery cook until veggies are soft
  5. Add Chili powder, pepper, cayenne powder, garlic powder and Cayenne seeds toss 'til blended in and meat well coated
  6. Add stewed Tomatoes and pinch of sugar sprinkled over tomatoes heat 'till boiling
  7. Add kidney beans and heat 'till they're cooked through
  8. Add Tomato soup heat 'till boiling
  9. Turn off heat and let set about 15-20 mins for flavors to blend before serving
  10. *NOTE stir often 1 small bean burns and you ruin the whole batch!!!
This basic recipe came from my Grandmother through my mother and then to me. But like always I had to change it ever so slightly to make it my own by making it chunky. Everybody always asks how do you make the hamburger chunky? Simple make sure the meat is frozen when you put it in the pan :) Good for cold days (my sons fav recipe but he refuses to eat it w/out saltine crackers lol)
