Michelle Losey's Carrot and Fruit Salad
INGREDIENTS
  • 1/2 peeled Apple bite sized chunks (I use cortland or macs)
  • 1/4- 1/2 peeled crisp sweet pear bite size chunks
  • 1/4 cup grapes sliced in 1/2
  • 1/2 cup sweetened pineapple tidbits/ or crushed drained
  • 1/2 cup raisins or 1/4 cup raisins and 1/4 cup dehydrated cranberries
  • 2 cups carrots shredded (people w/ no teeth like me may wanna shred it real fine, grate it or steam them couple mins)
  • Couple dashes salt
  • 1/3 cup Hellman's Mayonnaise
  • 1/3 cup Activia yogurt Plain (Greek yogurt preferred)
  • Sugar to taste
  • *Opt: sweetened flaked coconut
  • *Opt: sprinkle some small dehydrated fruits in it
DIRECTIONS
  1. put all fruits and veggies in a bowl
  2. In separate bowl mix mayo, salt and yogurt together
  3. Pour Mayo mix over carrot mix
  4. Mix well and taste add a lil sugar if needed
  5. Refrigerate a few hours w/ plastic wrap over top stir about every hour and put back in fridge
  6. Stir before serving
