Michelle's No-Bake Ice Box Lemon Pie

  • 1 graham cracker pie shell (or 1 frozen pie crust, if preferred)
  • 1 14 oz. can sweetened condensed milk
  • 1/3 c. lemon juice (fresh or bottled)
  • 1 c. thawed whipped topping (Cool Whip)
  1. If using frozen pie shell, bake according to directions and let cool. To prepare filling, pour the can of sweetened condensed milk into a mixing bowl, and add the lemon juice. Mix with a spatula or whisk until thoroughly combined. Next, add the whipped topping, and continue to mix until well blended. Pour the filling mixture into the pie shell, cover, and refrigerate for about an hour to allow the filling to set.
  2. Optional: Garnish with a thin slice of lemon, and add a dollop of whipped topping…or just enjoy it as is.
Quick and easy dessert if you're in a pinch. Delicious!!
