Mexican Cornbread

- 1 cup cornmeal
- 1 cup flour
- 4 tsp baking powder
- 3 TBLS sugar
- 1/2 tsp salt
- 2 eggs
- 1 cup milk
- 4 TBLS oil
- 3/4 cup grated colby/jack cheese
- 1 small can green chili or fresh jalapeno
- 3/4 cup corn, drained
DIRECTIONS
- Preheat oven to 425 degrees. Preheat 10" cast-iron skillet while mixing cornbread.
- Beat eggs and mix with milk and oil.
- Combine milk/eggs with remaining ingredients.
- Add 2 TBLS butter to preheated skillet. After melted, add cornbread mixture.
- Bake for 20-25 mins or until knife comes out clean.
