Mexican Chicken
INGREDIENTS
- 1 whole chicken or 2 whole chicken breasts
- 1 8oz pkg. taco seasoning
- 1 onion chopped
- 1 can Rotel (original)
- 1 cup chicken broth
- 1 can cream of chicken soup
- 1 1/2 cups shredded cheeses
- 1 can cream of mushroom soup
- 1 large bag Doritos
DIRECTIONS
- Boil chicken, bone and cut into bite size pieces.
- Line 2 quart shallow, greased casserole with slightly crushed Doritos.
- Put chicken and chopped onion on top.
- Mix rest of ingredients (except cheese) and pour over chicken and Doritos.
- Top with shredded cheese.
- Bake at 350 degrees for 30 minutes.
