Malted Milk Cake
INGREDIENTS
- 2 eggs-separated
- 3/4 cup shortening
- 1½ c. sugar
- 4½ heaping tsp. malted milk powder ( I use 2 tablespoons)
- ½ tsp. vanilla ( I use Wakins double strength vanilla)
- ½ tsp. salt
- 1½ tsp. baking soda
- 1½ c. buttermilk
- 2 3/4 cups cake flour
- Creamy Frosting
- 2 tbsp. rounded flour
- 1 c. water
- ½ c. shortening
- ¼ lb. butter
- 1 c. granulated sugar
- 1 tbsp. vanilla
DIRECTIONS
- NOTE*works bettr if eggs and buttermilk are room temp.
- Cream shortening and sugar, add egg yolks. Beat and add malted milk powder, salt, vanilla. Dissolve soda in the buttermilk and add alternately with the flour. Beat good.
- In separate bowl beat egg whites until it peaks. Then fold in fold in the egg whites into batter by hand. Pound out air bubbles. Bake at 350º for 20-25 minutes. Makes 3 9-inch pans.
- Creamy Frosting
- Cook flour and water until a thick paste, set aside and let cool. Mix shortening, butter, sugar until creamy. Then add cooled flour mixture. Add vanilla and beat well.

RECIPE BACKSTORY
If you are a fan of malted milk than this is one to try. I got it from Cooks last year and have made it numerous times. I do add just a tad more malted milk and have also made it with chocolate frosting on several occasions. Both the chocolate and the frosting that came with it is good.
