Lentil and Chicken salad

INGREDIENTS
- Lentil and chicken salad
- 1 cup cooked lentils
- 1 cup grilled chicken, chopped
- 1 cup cucumber, cubed
- 1/4 cup fresh daikon radish, cubed
- 1/4 cup red onion, thinly sliced
- Dressing
- 3 tbsp olive oil
- 1/4 cup balsamic vinegar
- 2 cloves garlic, crushed
- salt to taste
- 3 strips crispy bacon, crumbled
DIRECTIONS
- Mix all ingredients together then toss with dressing. Let marinade in dressing for 1/2 an hour or more. Makes great leftovers too.
RECIPE BACKSTORY
Lentils are a Super Food. They're high in essentials and are second only to Soybeans as far as having the most complete proteins in the vegetable kingdom. Other legumes fall far behind.
I serve this cold or room temperature. I'm not sure how the cucumbers would fare if the lentils were hot. It's even better the next day.
