Lemon Squares

  • 1 c. flour
  • 1/2 c. butter, softened
  • 1/4 c. powdered sugar
  • 1 c. granulated sugar
  • 2 tsp. grated lemon peel
  • 2Tb. lemon juice
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 eggs
  • Additional powdered sugar to dust bars
  1. Heat oven to 350F.
  2. In a small bowl, mix flour, butter and powdered sugar. Press into ungreased 8-inch square baking pan, building up 1/2-inch edge. Bake 20 minutes. Remove to wire rack.
  3. While crust is baking, in a small bowl, beat granulated sugar, lemon peel, lemon juice, baking powder, salt and eggs at high speed for 3 minutes or until light and fluffy. Pour over hot crust. Bake 25-30 minutes or until almost no indentation remains when touched lightly in center.
  4. Cool completely: about 1 hour. To serve, sprinkle with additional powdered sugar, and cut into squares, 5 rows by 5 rows.
  5. Yield: 25 bars
