Lemon Sponge Pie
INGREDIENTS
- 3 T butter softened
- 1 c sugar
- 2 eggs
- 1 tsp lemon zest
- 1/4c lemon juice
- 3 T flour
- 1c whole milk
- pinch salt
DIRECTIONS
- cream butter and sugar. Separate eggs add yolks to butter and sugar one at a time. Add lemon, flour, salt, mix well. Stir in milk.
- In separate bowl, beat egg whites till stiff. Fold into lemon mix. Pour into unbaked pie shell, bake 400 for 10min.
- Decrease to 350 for 35min or till knife comes out clean.
