Lemon Spinach
  • 4 boxes of the frozen (pictsweet type) frozen spinach
  • 2 lemons
  • olive oil
  • salt and pepper to taste
  1. Boil spinach until it isn't frozen anymore.
  2. Drain, wring, whatever is necessary to get out all the water.
  3. Put into a bowl that has a lid
  4. Squeeze the juice of the lemons into the spinach.
  5. Drizzle with Olive Oil
  6. Salt and Pepper to taste
  7. Stir well to incorporate flavors.
  8. Place in refigerator to get cold.
  9. Always stir before serving (settling occurs in refrig)
  10. This amount serves about 6. Very easy to adjust it really is to taste.
My mother taught me to make this and it is absolutely delicious. Meant to be ate cold if you can't wait good warm also
