Lasagna Roll-Ups
  • 1 box Lasagna pasta
  • 1 container ricotta cheese
  • 1 can chopped spinach
  • 1 jar marinara
  • 1/2 cup shredded mozzarella cheese
  1. Preheat oven to 350 degrees.
  2. Cook lasagna as directed on box. Drain and lay out pasta on parchment paper or a sheet of aluminum foil. Empty ricotta cheese into a medium size bowl. Drain liquid from can of spinach. Mix spinach with ricotta cheese. Spoon about 1/2 cup of ricotta/spinach mix on the end of one lasagna noodle and roll up from that end. Place into a baking dish. Repeat as many times as needed (I make about 8 roll-ups, but you can make as many as you'd like). Spread marinara over roll-ups. Sprinkle mozzarella cheese.
  3. Bake for 30-35 min.
  4. I've also tried black beans mixed into the ricotta cheese. It was pretty good. Worth a try.
