Kielbasa and Sauerkraut Casserole
  • 1 lb. kielbasa or smoked sausage
  • 1 lb. sauerkraut (bagged and sold in delicase), drained OR use half sauerkraut and half cabbage, shredded
  • 1/4 cup dark brown sugar (you can use white sugar)
  • 2 medium onions, sliced
  1. Slice the kielbasa. Sauté the onions and kielbasa in a little shortening or oil. In a 2-quart casserole dish, layer 1/2 of the sauerkraut, 1/2 of the kielbasa and onions, then sprinkle with 1/2 of the sugar. Repeat with the other half of the ingredients. Bake, covered, in 325 degrees F. oven for 1 hour. Serve it with mashed potatoes.
