Israeli Salad

  • 1 English Cucumber, diced
  • 2 Roma Tomatoes, seeded and diced
  • 1 Small Red Onion, diced
  • Zest of 1 Lemon
  • Juice of half of a Lemon
  • 3 Tbsp. Fresh Parsley, chopped
  • 3 Tbsp. EVOO
  • Sea Salt / Black Pepper
  1. Add the diced cucumber, tomato, and onion to a medium sized bowl. Add the lemon zest and juice along with the EVOO.
  2. Add the fresh parsley and salt / pepper to taste. Toss the salad together.
  3. Serve right away or prepare in advance and refrigerate.
A light and refreshing salad with only a few, simple ingredients. Deliciously fresh, this salad is great for summer barbecues and also helps to freshen up a carb heavy main!
