Hummingbird Cake

- 3 c. flour
- 2 c. sugar
- 1 Tbls. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 1/2 ts. vanilla
- 1 1/2 c. oil
- 3 eggs UNBEATEN
- 2. chopped bananas very ripe
- 1 c. pecan halves
- 1 can crushed pineapple with the juice.
- Icing:
- 1 8 oz. package Cream cheese
- 1/2 tsp. vanilla
- 1 1/2 tbls. butter, melted
- 3/4 c. powder sugar
- Non Cooking Spray
DIRECTIONS
- DON'T sift the flour.
- DON'T beat the eggs.
- DON'T drain the pineapple.
- Put all ingredients in a large bowl and mix well.
- Pour into a bundt pan that has been sprayed witht he cooking spray
- Bake in a 325 degree oven
- 1 hour 15 minutes.
- Cool 10 min.
- Remove and drizzle icing over warm cake.
