Hummingbird Cake

  • 3 c. flour
  • 2 c. sugar
  • 1 Tbls. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/2 ts. vanilla
  • 1 1/2 c. oil
  • 3 eggs UNBEATEN
  • 2. chopped bananas very ripe
  • 1 c. pecan halves
  • 1 can crushed pineapple with the juice.
  • Icing:
  • 1 8 oz. package Cream cheese
  • 1/2 tsp. vanilla
  • 1 1/2 tbls. butter, melted
  • 3/4 c. powder sugar
  • Non Cooking Spray
DIRECTIONS
  1. DON'T sift the flour.
  2. DON'T beat the eggs.
  3. DON'T drain the pineapple.
  4. Put all ingredients in a large bowl and mix well.
  5. Pour into a bundt pan that has been sprayed witht he cooking spray
  6. Bake in a 325 degree oven
  7. 1 hour 15 minutes.
  8. Cool 10 min.
  9. Remove and drizzle icing over warm cake.
