Hot Buttered Rum Cheesecake

  • 1 c. crushed shortbread cookies
  • 3 Tbl brown sugar
  • 5 pkg cream cheese
  • 1/3 c. heavy whipping cream
  • 1 Tbl rum extract
  • 1/8 tsp ground cloves
  • 3 eggs
  • 2 Tbl unsalted butter
  • 1 1/4 sugar
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
DIRECTIONS
  1. Preheat over to 325 deg.
  2. Mix cookies, brown sugar and butter. Press firmly into spring form pan. Beat cream cheese, sugar, cream, rum, cinnamon, nutmeg and cloves in a large bowl on medium speed. Poor over crust. Bake 1 hour 15 min to 1 hour 25 min. Turn off oven. Leave in oven 30 min. remove from oven to cooling rack for 30 min. Run spatual along sides of pan. Refridgerate 3 hours uncovered, then refridgerate covered over night.
