Hot Artichoke Canapes
INGREDIENTS

  • 1 loaf french bread
  • 1 cups fresh spinach
  • 3 cups quartered artichokes- cleaned and dried
  • 6 large green olives
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/4 cup onion chopped
  • 1/8 tsp oregano
  • 1/8 tsp red pepper sauce
  • 1 tbsp parsley
  • 1/2 cup mayo (optional)
  • 1 tbsp garlic minced
  • 1 can diced green chiles (4 oz)
  • 1/2 cup pancetta, cooked crisp, diced
  • 1.5 cup shredded cheese (Parmesan, Romano, Pecorino)
  • salt and pepper
DIRECTIONS
  1. Toss the artichokes in lemon juice, olive oil, salt and pepper.
  2. Roast artichokes on a covered sheet pan for 20-25 minutes at 375 degrees.
  3. Cool and puree with all other ingredients but use only 1 cup of cheese in the bowl of a food processor.
  4. Serve on french bread toasts, top with remaining cheese, and broil under brown/bubbly.
  5. Serve them hot on cooling rack so they don't get soggy.
