Hot Artichoke Canapes

- 1 loaf french bread
- 1 cups fresh spinach
- 3 cups quartered artichokes- cleaned and dried
- 6 large green olives
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1/4 cup onion chopped
- 1/8 tsp oregano
- 1/8 tsp red pepper sauce
- 1 tbsp parsley
- 1/2 cup mayo (optional)
- 1 tbsp garlic minced
- 1 can diced green chiles (4 oz)
- 1/2 cup pancetta, cooked crisp, diced
- 1.5 cup shredded cheese (Parmesan, Romano, Pecorino)
- salt and pepper
DIRECTIONS
- Toss the artichokes in lemon juice, olive oil, salt and pepper.
- Roast artichokes on a covered sheet pan for 20-25 minutes at 375 degrees.
- Cool and puree with all other ingredients but use only 1 cup of cheese in the bowl of a food processor.
- Serve on french bread toasts, top with remaining cheese, and broil under brown/bubbly.
- Serve them hot on cooling rack so they don't get soggy.
