Hoisin Chicken and Broccoli Stir-Fry

  • 1 tbsp vegetable oil
  • Cooking spray
  • 1/3 cup chicken broth
  • 3 tbsp hoisin sauce
  • 2 tbsp dry sherry
  • 2 tbsp orange juice
  • 1 tsp cornstarch
  • 2 tsp bottled minced garlic
  • 2 tsp bottled minced fresh ginger
  • ½ tsp sesame oil
  • 1 lb chicken breast tenders
  • 3 cups bagged broccoli florets
  • 1 (8 oz) can whole water chestnuts, drained
DIRECTIONS
  1. Heat vegetable oil in a large nonstick skillet coated with cooking spray over medium-high heat. Combine broth and next 7 ingredients (through sesame oil). Add chicken to pan, and sauté 2 minutes. Add broccoli, and sauté 5 minutes. Add chestnuts, and sauté 2 minutes. Add broth mixture, and cook 1 ½ minutes or until sauce is slightly thick, stirring constantly.
