Healthy Apple Muffins

  • 3/4 cup whole wheat flour
  • 3/4 cup all purpose flour
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 tsp. cinnamon
  • 1/4 tsp ground ginger
  • 1 egg
  • 1/2 cup brown sugar
  • 1/3 cup unsweetened applesauce (or vegetable oil, if you’re not calorie counting)
  • 1 tsp. vanilla
  • 3/4 cup lowfat buttermilk (I subbed 3/4 cup milk with 1 tsp lemon juice)
  • 1 cup shredded apple (1 large apple)
  • 1/3 cup chopped pecans
DIRECTIONS
  1. Preheat oven to 400 and grease a 12-cup muffin tin. Sift together flours, baking powder and soda, salt and spices.
  2. In a seprarate bowl, beat egg with brown sugar until well combined. Stir in vanilla, buttermilk, applesauce and shredded apple.
  3. Pour wet mixture into dry mixture and stir until just combined. Fold in nuts.
  4. Pour mixture into muffin cups and bake approximately 18 minutes or until a toothpick inserted comes out clean
