Grilled Salmon with Prosciutto
  • 1/4 cup Dijon mustard
  • 2 tbsp. chopped fresh chives or green onions
  • 1/4 tsp. pepper
  • 4 skinless salmon fillets (6 oz each
  • 4 thin slices prosciutto
  1. In a small bowl mix together the mustard, chives and pepper.
  2. Spread over both sides of the salmon.
  3. Place fish skinned side down on prosciutto and wrap around the fish.
  4. Place fish, prosciutto seam side up on the greased grill, turning once, until fish flakes easily when tested, about 10 minutes
Another way to cook salmon on the grill. The proscuitto keeps the salmon from getting overly dry. And because the proscuitto holds it together you don't need a plank.
