Grilled Salmon with Prosciutto

INGREDIENTS
- 1/4 cup Dijon mustard
- 2 tbsp. chopped fresh chives or green onions
- 1/4 tsp. pepper
- 4 skinless salmon fillets (6 oz each
- 4 thin slices prosciutto
DIRECTIONS
- In a small bowl mix together the mustard, chives and pepper.
- Spread over both sides of the salmon.
- Place fish skinned side down on prosciutto and wrap around the fish.
- Place fish, prosciutto seam side up on the greased grill, turning once, until fish flakes easily when tested, about 10 minutes
