Grilled Maple Mustard Brussel Sprouts

  • 1 pound brussels sprouts
  • 2 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 1-2 tablespoons dijon mustard
  • 2 cloves garlic, finely minced
  • ½ teaspoon cayenne pepper
  • ½ teaspoon salt
  • Freshly ground black pepper
DIRECTIONS
  1. Preheat grill to 400 degrees F and lightly oil the grate.
  2. Cut off the stem of the brussel sprouts and remove any outer yellow leaves.
  3. Place brussels sprouts in a large bowl.
  4. In a small bowl, whisk together the olive oil, maple syrup, dijon, garlic, cayenne, salt and pepper. Pour all over the brussel sprouts and toss until they’re full coated.
  5. Skewer 4-5 brussels. Reserve extra sauce in the bottom of the bowl.
  6. Place skewers on grill, cooking for about 5-7 minutes per side, or until brussel sprouts are golden brown.
  7. Before serving, brush brussels with any remaining sauce and sprinkle with a little extra salt, if desired.
