Green Beans with Toasted Almonds

  • 1 pound green beans
  • 1/2 cup almonds
  • 2 shallots
  • 2 Tablespoons olive oil
  • Salt to taste
  • Pepper to taste
DIRECTIONS
  1. Boil water in a medium sized pot.
  2. Prepare the green beans by cutting off the ends and slicing any large pieces in half. Boil for 5 minutes, drain, and set aside.
  3. While the green beans are boiling, chop the almonds into small pieces and dice the shallots.
  4. Heat 1 Tablespoon olive oil in a medium pan over low-medium heat. Add the almonds and stir continuously for 2 minutes. Set aside.
  5. Increase the heat to medium-high and add the second Tablespoon of olive oil. Stir in the shallots and cook for 2-3 minutes. Then add the green beans and stir for another 2 minutes.
  6. Remove from heat and add salt and pepper to taste. Serve immediately, topped with the almonds.
