Great Northern Bean Soup

  • 2 Cups great northern beans
  • 1 Carrot, diced
  • 1 Stalk of celery sliced thin
  • 1 Small onion, diced
  • 2 Chicken bouillon cubes 2 Cups water
  • 1 Tablespoon olive oil
  • 1 Teaspoon basil
  • 1 Teaspoon garlic powder
  • 1/2 Teaspoon thyme
DIRECTIONS
  1. Let beans soak in water overnight. Bring to a low boil and boil until tender, about 1 hour, then drain and rinse. In a cook pot, heat oil and add onion, carrots and celery cooking 5-6 minutes until translucent. Add in 2 cups of water and bouillon cubes and bring to a boil, 5 minutes. Add beans and spices and simmer 15 minutes.
