Grandma Mary's Meringue Frosting

INGREDIENTS
  • 2 cups sugar
  • 2/3 cup water
  • 1/2 teaspoon cream of tarter
  • 4 egg whites
  • 1 teaspoon vanilla
DIRECTIONS
  1. In a saucepan, combine sugar, water and cream of tarter. Bring steadily to a boil, then boil rapidly to 236 degrees (about 10 minutes) - soft ball stage.
  2. Beat egg whites until stiff.
  3. Pour syrup very slowly over egg whites, beating constantly.
  4. Add vanilla and continue beating until frosting holds its shape.
