Grandma’s Carrot Ring
INGREDIENTS
  • Servings: 12 servings
  • 2 bunches of carrots
  • 2 eggs
  • Salt
  • Pepper
  • 1 heaping tsp sugar
  • Drop vanilla (optional)
  • 1 C milk
  • Cold butter
DIRECTIONS
  1. Cook carrots and put through meat chopper—or if soft, mash with potato masher.
  2. Beat eggs very well.
  3. Add salt, pepper, sugar, and vanilla (optional) to eggs.
  4. Beat again.
  5. Add one cup milk to egg mixture and beat again.
  6. Mix with carrots.
  7. Put in pan well-buttered with cold butter.
  8. Bake immediately in 350 degrees oven for about 40 minutes to 1 hour, or until set.
