Goji Oatmeal Clusters

INGREDIENTS
  • 1 1/2 bananas
  • 1 cup unsweetened applesauce
  • 2 tsp. vanilla extract
  • 1 cup date sugar
  • 2/3 cup ground walnuts
  • 2/3 cup whole grain flour
  • 1 1/4 tsp. aluminum-free baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 3/4 cup oatmeal
  • 1/4 cup Goji berries
  • 1/4 cup raisins (or currants)
  • 6 pitted dates (chopped)
  • 1/2 cup chopped walnuts
DIRECTIONS
  1. Blend bananas, applesauce, vanilla, and date sugar in blender until creamy.
  2. In a large mixing bowl, combine the flour, baking powder, cinnamon, and nutmeg.
  3. Then add the blended moist ingredients and mix. Stir in oatmeal, chopped nuts, dates, and raisins.
  4. Use a large spoon to drop mixture on a non-stick baking sheet and bake for 20 minutes at 350 degrees.
