Gingersnap Pumpkin Pudding

- 1 3/4 cups milk
- 1 package pudding mix - cheesecake or vanilla
- 1/2 cup pumpkin puree
- 1/2 teaspoon pumpkin pie spice
- 10 gingersnap cookies
- 1 cup whipped topping
DIRECTIONS
- Whisk together milk and pudding. Stir in pumpkin spice, let stand 2 minutes.
- Crush 7 cookies. Add whipped topping to pudding mix.
- Sprinkle with cookie crumbs and serve garnished with remaining cookies.
