Gado Gado
INGREDIENTS
  • vegetable suggestions:
  • spinach leaves
  • cucumbers
  • shredded lettuce
  • green beans
  • carrots
  • boiled potatoes
  • bean sprouts
  • hard boiled eggs
  • fried tofu
  • Sauce:
  • 1 cup of chopped onion
  • 6 cloves of minced garlic
  • 3 T. of oil
  • 1 cup of boiling water
  • 2 cups of crunchy peanut butter
  • 2 T. of honey
  • 1 t. of Tabasco
  • 1 T. of lemon juice
  • 1 T. of fresh ginger
  • 3 cups of milk
  • Shrimp chips (optional)
DIRECTIONS
  1. Gather an assortment of veggies both raw or lightly cooked, and place in a salad bowl.
  2. To make the sauce: Sauté onion and garlic in oil.
  3. Stir in boiling water, peanut butter, honey, Tabasco, lemon juice and ginger.
  4. Cook sauce over medium heat until hot and peanut butter is melted.
  5. Gradually stir in milk.
  6. Serve the sauce over the veggies.
  7. Shrimp chips are the classic accompaniment.
