French Breakfast Muffins

  • 1 1/2 c. and 2 Tbsp. flour
  • 3/4 c. sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/2 c. milk
  • 1 egg, beaten
  • 1/3 c. melted butter or margarine
  • Topping:
  • 1/3 c. melted butter or margarine
  • 1/2 c. sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. vanilla
DIRECTIONS
  1. Combine dry ingredients in large mixing bowl. Add wet ingredients and mix thoroughly.
  2. Spray muffin pan (or place liners) and fill half full withe mixture. Bake at 400 degrees for 20 minutes or until lightly brown. Remove muffins from pan immediately.
  3. While muffins are baking, mix together sugar, cinnamon, and vanilla until mixture is even. Dip muffin tops in butter, then sweet topping. Ready to eat!
