Flan with a plan
INGREDIENTS
- Cooking Time: 20 to 25
- 1 Qt. half and half (scald)
- 7 Whole large eggs
- 1/2 cup sugar
- pinch of salt
DIRECTIONS
- Preheat oven to 350 degrees
- Beat well eggs, sugar and salt well and add scalded cream
- Pour into caramel lined baking dish.
- Set dish into hot water and slightly larger pan as high as possible.
- Bake for 20-25 minutes depending on depth of dish.
- When inserted knife comes out gookie, remove from oven and from hot water bath. if knife comes out clean, flan is overcooked!
- Caramel: in enamel or stainless steel (NOT ALUMINUM) small pan, put 1 cup sugar and 4 tablespoons water.
- Boil until caramelized.
- Watch carefully so it doesn't burn.
- Pour into dish. Let set.
