Elisabeth's Quick and Easy Tomato Pasta Sauce
  • 1/8 cup bottled minced garlic
  • 1 cup frozen chopped onion
  • 1/4 cup extra virgin olive oil (good quality)
  • ~30 oz. of chopped tomatoes (salt-free of course! You can used petite diced or normal if you want your sauce more chunky than saucy)
  • 15-30 oz. tomato sauce (salt-free of course!)
  • Oregano, basil, parsley, garlic powder, Italian seasoning to taste
  1. Saute garlic and onion in oil until aromatic.
  2. Add tomoatoes and tomato sauce.
  3. Season to taste.
This recipe is never the same for me and that is what I like about it. I can change it to suite my mood. Sometimes I saute mushrooms with the garlic and onions, or for my husband, I cook a chunk of roast in it to give it a meaty flavor. He can then have the meat on a sub bun for a great lunch :)
